Crustless vegetarian quiche

You’ll need:

  • 4 eggs
  • 1 broccoli head
  • 300 grams mushrooms
  • 150 grams grated cheese (ex: light cheddar cheese)
  • half a bunch of green onions
  • salt and pepper
  • a round baking tray
  • baking paper

How to:

Cut the broccoli head into pieces (as small or large as you like to see them inside the quiche) and boil it for not more than 5 minutes, because it will also bake inside the quiche. After it boils, drain it and leave it to cool down.

Cut the green onions and the mushrooms and saute them together in a bit of olive oil and a pinch of salt and pepper, for about 5 minutes.

Whisk the eggs with a pinch of salt and pepper.

Preheat the oven at 175 degrees Celsius.

After the above ingredients are cool, add them over the whisked eggs and mix them together with the grated cheese. Pour everything in the baking tray covered with baking paper and bake for 35 minutes.

You can serve this quiche simple or with a fresh tomato and rocket salad (rucola).
